- Take For vada
- Prepare 6-7 boiled potatoes
- Get 2 chopped green chillies
- Make ready 1 finely chopped onion
- Take 1 tsp turmeric powder
- Prepare 1/2 tsp Red chilli powder
- Prepare 1 tsp Mustard seeds
- Make ready 1 cup gram flour
- Get to taste Salt

- Take 1/4 cup roasted ground nuts
- Get 1 whole garlic
- Make ready 8-10 green chillies
- Make ready 1/2 tsp cumin seeds
- Make ready to taste Salt
- Prepare 2-3 tsp refined oil
Spicy potato filling is sandwiched between burger buns and layered with spicy chutney! It's supposed to be quite spicy and one of the main chutneys for the vada pav. If you guys have been following me for a while, you would know that I can't eat very. The good thing about said vada pav is that it comes smeared with Kolhapuri thecha (a Maharashtrian condiment of finely ground green chillies) and a Though it accompanies a bowl of aloo chole, it is the latter that plays the role of sidekick: understated and only slightly spicy, but a pleasant enough.
Steps to make Vada pav and spicy thecha:
- First we'll prepare thecha. Heat oil in a small pan, add cumin seeds. When they start to crackle add green chilli and fry them for 2 minutes with continuous stirring. Take out the green chilli in a mixture jar and add garlic cloves, fry them for 2 minutes with continuous stirring. Take out the garlic as well in jar. Add roasted peanuts and Salt and grind for just 5 seconds. It shouldn't become smooth paste.
- Now we'll prepare vada. Heat oil in a pan and add mustard seeds, when they start to crackle, add chopped onion and fry till it become golden brown. Then add turmeric powder, Red chilli, mashed boiled potatoes, green chilli and salt. Mix them well and cook them for 2-3 minutes.
- Now take gram flour, add water and Salt in it and form a paste. Paste should neither be much thick nor much thin. Now make small size balls of potato mixture. Heat oil in a pan, dip potato mixture balls in gram flour paste and then put them in oil to fry. Fry them till they become light brown in colour.
- Finally take pav, cut them from the middle horizontally. Apply layer of thecha and put vada in heat. Serve hot maharashtrian famous vada pav with spicy thecha.
