- Wash all the vegetables thoroughly under running water, once done set aside for 5 minutes to drain all the excess water.
- Peel the sweet potato and chop into small pieces. Similarly, cut the carrots, onion and tomato into small pieces.
- Cook all these in the pressure cooker for three whistles.
- Remove from the cooker, and whizz it the the mixer to make it smooth.
- If you want a smooth and creamy texture, strain this mixture through a fine sieve to remove the fiber I had it just as it is
- In a pan, heat the olive-oil, once hot add the garlic, saute the garlic till its light brown in colour.
- Then add the soup to it and let it simmer for 5 minutes.
- Remove from the heat and garnish with some coriander and fresh cream.
- Enjoy this with a some bread or plain steamed rice.
