Instructions to make Cucumber Cake:
  1. Squeeze cucumber and keep water aside.
  2. In a deep nonstick pan roast semolina with ghee on a low medium flame till it changes its colour.
  3. Lower the flame and add cucumber, jaggery. Mix well till jaggery is melted.
  4. Add cardamom powder, clove powder and charoli seeds and give it a stir to mix spices well.
  5. Cover the pan and make flame on low to let it cook for 20-25 mins.
  6. When almost done you can check if the of the cake sides is brown or by inserting a toothpick if it comes out clean.
  7. Oven Method: Preheat the oven.
  8. After step 4, grease a cake tin with ghee and pour the mixture
  9. Bake on 180 degrees for 15-20 minutes.
  10. Check by inserting a toothpick if it comes out clean.
  11. Serve warm.
  12. Best part to eat is the brown crust on the bottom :)
  13. This cake will not rise.
